When I first started making these cutting boards nearly 20 years ago, they began as a recycling project. I love to use wood from other projects; from my own shop as well as the shops of other woodworkers which would normally end up in the landfill. As my business has grown, I’ve had to purchase more wood for these beauties than I up-cycle, but I still use as much recycled content as possible in everything I make. There are six major species I use to make cutting boards. Maple is a native tree of the US and produces a whitish colored wood sometimes with darker grain texture. Walnut is a very dark wood, also from the US and is becoming harder to acquire and increasingly expensive due both to a pest devastating trees and high demand. Native cherry has a beautiful reddish brown color that continues to deepen as it ages and is a wonderful wood to work with. White oak grows mostly east of the Mississippi and has great anti microbial properties, it has a medium to light brown color. I use two “exotic” woods: Purple Heart from the rainforest in South America and Padouk from Africa which has a beautiful bright red tone. I do my best to buy ethically harvested wood so these woods will be available for generations to come. I often use two part epoxy mixed with turquoise to fill voids and knot holes.
